The Teres Major is a seldom used muscle in the shoulder. Few meat cutters will extract this cut from the shoulder as it requires more time and effort. It is second only to the Tenderloin Filet in tenderness and named the shoulder tender. If sliced into medallions, they are appropriately named petite tender medallions which resemble the Tenderloin Filet.
As with all grass-fed meats, it will be leaner and require attention when grilling. Cooking times tend to be less for grass-fed meats.
